Today I’m making an old bloggers favourite for lunch, avocado on toast with a fried egg. This such an easy and quick meal to make and full of fibre an good fats. It makes a filling and healthy lunch for the whole family to enjoy.

This evening is cheat night so I’m cooking Tagliatelle with parmesan asparagus and bacon.
I’m trying so hard with my diet right now, and have successfully cut out grains from most of my meals, however I allow myself the odd cheat meal here and there and this dish always satisfies a pasta craving!
It’s super easy to make and loved my the whole family.
I thought I’d create a recipe tonight made of a few of my favourite things. My little boy has been asking for a lasagne for sometime, and as we’re cutting our grain intake, I created this version of the classic lasagne with layers of aubergine (eggplant to my friends in the US!), thick beef ragu and a rich creamy wheat free cheese sauce. No oven required!
