I haven’t posted a recipe for a while and today for lunch I made Sausage, Avocado and Egg Salad for my family. I thought I would share this with you as it’s a great replacement for the traditional Full English fry up that us Brits love so much.
Ingredients
Serves 4
- 12 thin sausages. (I used local ones)
- 4 eggs
- 1 avocado
- Half a punnet of cherry tomatoes
- Half a cucumber
- 1 bag of salad leaves
- Cheddar cheese grated
- Mayo
- Black Pepper
Method
- place the eggs in a pan of cold water and bring to the boil. When boiling, time 4 minutes then put the eggs into cold water to cool them before peeling
- fry the sausages in a pan and when they are half done take the eggs and peel them and set aside whilst continuing to cook the sausages
- divide the leaves between 4 and arrange on 4 plates
- cut the cherry tomatoes in half and add to the 4 plates with the leaves
- cut the cucumber up into small pieces and add to the plates
- cut up the avocado and add a quarter to each plate
- when the sausages are done cut them up into pieces and add to the top of the salad
- sprinkle with a little cheddar cheese and then top with the egg
- season with black pepper and add the desired amount of mayo
- ready to eat
