Peri Peri Avocado Bagel Lunch

It’s lunch time and one of my favourite lunchtime bites is the Peri Peri Avocado Bagel.

I have always loved avocados but have recently been finding that they are much more than just a salad fruit! Today I have used them to make a very quick and easy lunch for my family.

Ingredients

Serves 4:

  • 2 avocados (half an avocado per person)
  • 4 bagels
  • Marks and Spencer Peri Peri Mayo
  • Butter

 

Method

Slice the avocados into slices around 0.5cm thick.

Slice and lightly toast the bagels.

When lightly toasted and cooled until safe to touch without burning your fingers spread with a very thin smear of butter.

Add the avocado onto the bottom half of the bagel and arrange the slices.

Dress with the Peri Peri mayo.

Add the top half of the bagel and enjoy!

This Avocado Bagel really is a tasty lunch for avocado lovers like me and the bagels are a nice treat as I’ve been avoiding grains for most of this week. My children like this recipe although the mayo is very spicy my daughter has plain mayo instead of the peri peri.
